I love "go to" recipes; recipes that are tried and true, that give you the same yummy result each time! I love experimenting when I am cooking, but it's nice to have a repertoire of easy treats. Here is one my favourite hors d'oeuvre recipes for any occasion. So simple in fact, that my youngest son Brandon was actively involved in preparing these with me. This is NOT my recipe, so I am not taking the credit for it, just sharing it with you, because it's so easy and so good!
Toasted Goat Cheese Ravioli with Red Pepper Dip
- 24 wonton wrappers
- 1/3c soft goat cheese (plain or with herbs)
- 1/4c grated parmesan
- 1c roasted red peppers (from water-packed jar), chopped
- 1/3c sour cream
- 2tbsp fresh basil, finely chopped
- sea salt and pepper to taste
Oven @ 400. Cover a baking sheet with parchment paper. Arrange wonton wrappers on a flat surface. Spoon 1/2tsp goat cheese onto each wonton. Using wet fingers (dip fingers in water), wet edges of wonton. Fold wonton over, making a triangle and press together to seal. Transfer wontons to prepared baking sheet. Sprinkle wontons with parmesan over top. Bake 8-10 min, until wontons are golden and brown and toasted.
In blender, combine roasted red peppers and sour cream. Puree until smooth. Transfer dip to a bowl and fold in basil. Season with salt and pepper. Serve ravioli with red pepper dip on the side for dunking! Bon appétit!
